Drunken Mexican Chorizo and Queso Dip

It’s Father’s day weekend, and in our family we savor the opportunity to celebrate.  So even though it’s only Friday we are starting the fiesta early.  Mexican food on a beautiful Friday night, cold cerveza with salt & limes, spicy chorizo and cheese with tortilla chips— it’s good to be daddy…

Drunken Mexican Chorizo and Queso Dip
¼ pound ground pork chorizo
½ cup white onions –small dice
1 small Serrano pepper- finely chopped
1 Tablespoon chili powder
¼ teaspoon ground cumin
¼ teaspoon oregano – crushed
12 oz Mexican beer
8 oz Jack cheese-shredded
1 Tablespoon all purpose flour
Salt/Pepper- to taste
1 Tablespoon fresh lime juice
Chopped cilantro and onions

  •  Heat a medium sauce pot over medium/high heat and brown chorizo, onion, and Serrano pepper
  • Add chili powder, cumin, oregano and beer- simmer for 3-5 minutes
  • Toss shredded cheese in flour and slowly add to chorizo- reduce heat to low – stirring to combine
  • Season to taste with Salt/Pepper and lime juice
  • Garnish with chopped cilantro and onions
  • Serve warm with tortilla chips
