It’s Father’s day weekend, and in our family we savor the opportunity to celebrate. So even though it’s only Friday we are starting the fiesta early. Mexican food on a beautiful Friday night, cold cerveza with salt & limes, spicy chorizo and cheese with tortilla chips— it’s good to be daddy…
Drunken Mexican Chorizo and Queso Dip
¼ pound ground pork chorizo
½ cup white onions –small dice
1 small Serrano pepper- finely chopped
1 Tablespoon chili powder
¼ teaspoon ground cumin
¼ teaspoon oregano – crushed
12 oz Mexican beer
8 oz Jack cheese-shredded
1 Tablespoon all purpose flour
Salt/Pepper- to taste
1 Tablespoon fresh lime juice
Chopped cilantro and onions
- Heat a medium sauce pot over medium/high heat and brown chorizo, onion, and Serrano pepper
- Add chili powder, cumin, oregano and beer- simmer for 3-5 minutes
- Toss shredded cheese in flour and slowly add to chorizo- reduce heat to low – stirring to combine
- Season to taste with Salt/Pepper and lime juice
- Garnish with chopped cilantro and onions
- Serve warm with tortilla chips
