Spinach and Sweet Pepper Mini Frittatas

I’m just not ready. I  don’t care that it is January 17th, I’m just not ready.  I’m not ready to start the new year because  there is still one lonely nutcracker that hasn’t made it up to the attic.

I slightly remember there was trick or treating because I did find a lot of empty candy wrappers stuffed between the couch pillows. I have a strange feeling there was a lot of pumpkin cake with cream cheese frosting, a couple of extra servings of mashed potatoes, and then I do believe there was a lot of champagne, toasting, and staying up way too late.

I’m not ready to start the new year because my giant chocolate birthday cake is still sitting on the kitchen table with a fork in it.  I walk by the cake all day long and with every passing bite I tell myself,  “It’s okay Louise… because your just not ready.”

People are counting on me, recipes need to be written,  and I’m  suppose to show up in a pretty dress on Saturday to teach a class. I hope it fits, because … I’m seriously not ready.

The only advice I can give you about 2013 is eat a healthy breakfast.  Then go back to bed, wake up, and eat some more cake… until you are ready, 2013 can wait.
