Avocado soup with bacon and chili rubbed croutons

What I really want for Mother’s day is to eat green food without ANYBODY making a face or complaining.  I want to feel free to make creamy avocado soup, with coconut milk,tons of lime juice and cayenne pepper, without somebody  reminding me they don’t like the texture of avocados or  questioning whether I put vinegar in the soup.  I want to you, yes YOU,  to stay away from my bacon with your dirty little fingers! When you walk by and see my bacon draining on the paper towels … just keep on walking.  I don’t want you to dig through the soup like you are on a crime scene, looking, inspecting, and interrogating me about whether there is kale in this soup.  I want you to take a bite … a big bite,  of my avocado soup without having that scared-crunched-up-forehead-worried-look-on-your-face like I might be trying to poison you.  Really after all these years of good food, do you really think I might try to slip you some bacon laced with rat poison?  Really Mellor ? … don’t answer that.   What I really want for Mother’s day is  for you to clean your room, I know you say it’s clean … but for kicks and giggles can you just please  clean it again?  I know you like to neatly organize your clothes on the floor next to the hippo, but for dear old mom, can we fold them and put them in the drawer like they use to do it in the olden days. What I would really love for Mother’s Day is for  you to thank me for baking you peanut butter cookies by NOT leaving  and old cup full of milk with floating crumbs on the nightstand? What I would really love for Mother’s day is that you would put your books away.  You know the ones, that pile you step over every day when you walk into your room…   What I would really love for Mother’s day is to get up at the crack of dawn, eat an apple fritter in the car with a skinny vanilla latte (extra hot) and walk through the ENTIRE Rose bowl vintage flea market.  I would like you to hold my bags, walk slowly, and not complain when I curiously stop at every vendor looking for that perfect dish. One last thing, don’t remind me of all the blue dishes and spoons I already have, remember it’s Mother’s Day.   

Avocado soup with bacon & chili rubbed croutons

Serves: 4 - 6
  • ½ pound thick cut nitrate free bacon, cut into lardons
  • ⅛ teaspoon cayenne pepper
  • 2 teaspoons mild chili powder
  • 1 Tablespoon bacon grease
  • 1½ cup cubed stale sour dough bread
  • 1 teaspoon mild chili powder
  • pinch of salt
  • pinch of cayenne pepper
  • 2 large Haas avocados, peeled and pit removed - about 2 cups
  • ½ small bunch of cilantro, washed and thick stems removed
  • 1 Tablespoon red onion,roughly chopped
  • 2 limes juiced to yield 2 Tablespoons of lime juice
  • 1- 14 ounce can light coconut milk
  • 1 Tablespoon honey
  • ⅛ teaspoon cayenne pepper
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • water as needed
  1. Heat a medium saute pan over medium heat and add in the cut bacon. Season the bacon with cayenne pepper and chili powder. Stir to combine and cook the bacon until all the fat has rendered out and the bacon is crispy. Remove the bacon with a slotted spoon and drain on paper towels.
  2. Reserve about 1 Tablespoon of bacon grease and drain out the rest. Return the 1 Tablespoon of bacon grease back to the pan and warm over medium heat. Add in the cubed bread and stir to combine with the remaining ½ teaspoon of chili powder, a pinch of cayenne pepper, and a pinch of salt. Toast the bread by gently moving it around the pan for about 3-4 minutes or until all the sides are golden and crispy. Remove from the heat and cover lightly with foil to keep warm.
  3. Place the peeled avocados into a blender or food processor with the cilantro, onion, lime juice, coconut milk, honey and remaining seasoning. Blend until smooth and creamy about 2 minutes. If the mixture is too thick you can add water, 1 Tablespoon at a time until the desired consistency is achieved. The soup should resemble melted ice cream in texture.
  4. Garnish the soup with warm bacon and croutons.
  5. The soup is best served fresh but will hold for up to a day in the refrigerator.

    Wow! This sounds simply amazing. I am no cook but my wife is an excellent chef and I know she has been dying for a great new avocado recipe. We have both discovered a new love for it recently. Thanks for a great blog that will likely end up a great meal for me!

      Thank you Phillip, I couldn’t get enough of this soup, SO good. You can make the croutons as spicy as you would like by adding more cayenne.
